Seaveges Suji Aonori - Japanese Seaweed Powder

Suji aonori is considered the most aromatic and elegant of Japan's edible seaweeds. This is it as a fine powder: a deep green seasoning with a fresh, almost herbal ocean aroma and distinct umami, made to be sprinkled over food just before serving. Think of it like saffron: it is dosed in pinches, not tablespoons, and a small amount carries a whole dish. The powder comes from Sea Vegetable Company, which in 2016 became the first in the world to grow aonori on land in pure underground seawater. The method was born out of a problem: wild harvests of suji aonori have declined sharply as Japan's coastal seabeds have been depleted. Land cultivation also gives a cleaner product, and the seaweed is dried fresh to preserve the aroma without off-flavors. The contents are 100% suji aonori, nothing else. Use it the way you would use a fresh herb: a pinch over butter-fried fish, baked potatoes, risotto, eggs or pasta. Try it instead of dill on midsummer new potatoes, or sprinkle it over salted crisps and fries. The aroma is awakened by fat, so it is at its best with butter, oil or dairy. 15 grams may sound small, but this is a bag with long reach: a pinch of half a gram to one gram is enough per dish, so the bag carries 20 to 30 dishes of concentrated ocean aroma. That is how it is used in restaurant kitchens too.
