Dashi ingredients

Dried, and flavorful for exactly that reason.

Dashi ingredients are dried goods whose only job is to give up their flavor to water. The drying is not preservation as an afterthought but the whole point: it concentrates the umami compounds and in some cases creates new ones that never existed in the fresh ingredient. The family differs from the rest of the pantry on one point that governs everything else, namely that the ingredient is discarded and the liquid is kept.

everything releases into water in ten to twenty minutes; none of them is simmered for hours like a Western stock

glutamate and inosinate reinforce each other, which is why kombu is almost always paired with katsuobushi or niboshi

kombu belongs here in function but lives in the seaweed family, since it is a kelp before it is a broth ingredient

dry, dark and airtight; moisture ruins them all, and katsuobushi also loses its aroma within days of shaving
